Crusader Kings 3, a medieval simulator from Paradox. It is better in every aspect than CK2.
You have two starting dates 867 just after establishment of Norse state in York and 1066, just before Harald Hardrada's invasion of England. You can play as Harald and get England or play as harold and give both Harald and William a bloody nose and keep England Anglo-Saxon.
You can play as any character ofc, from Byzantine Emperor to a small local chief in Estonia.

Crusades make Ck3 unplayable.
You cannot play as Abbasids becuase the Pope sends his hordes every 5 years to retake Jerusalem.

Victoria II is basically the only game I play these days. I recently got back into it and, although in theory it should be crap, I've actually enjoyed playing it with the cold war mod despite some limitations.
